Garland restaurant ranges (MCO, GCO, and Star series) are workhorses in professional kitchens. They use a combination of indicator lights and diagnostic flash patterns rather than numeric displays. The most common faults involve the ignition system, thermostats, and gas valves.

Burner Won’t Light
Garland ranges use a spark ignition system. When you turn the burner knob, a spark electrode near the burner should click and ignite. If there’s no spark:
- Check that the spark electrode wire is connected to the ignition module
- Check the electrode gap — should be 1/8 inch from the burner port
- Clean the electrode tip — grease and carbon can insulate it
- The ignition module (Garland 4991, ~$70) may have failed — you can hear a weak or silent spark
Oven Won’t Reach Temperature
Garland oven thermostats are mechanical — a capillary tube filled with fluid senses temperature and opens/closes the gas valve. Oven too cold usually means the thermostat has lost its capillary charge. When this happens, the gas valve never fully opens. Replace the thermostat (Garland 4312, ~$55). This is a 30-minute job: remove the knob, bezel nut, and capillary bulb from the oven back wall, then reverse the install.
Burner Flames Out (Pilot Goes Out)
On Garland units with standing pilots, the thermocouple senses the pilot flame. If the thermocouple fails, it stops generating millivolts and the safety gas valve closes. Test: clip a multimeter to the thermocouple output and heat the tip with a lighter. A good thermocouple generates 25-35 millivolts. Below 15mV = replace. The universal Garland thermocouple (4478, ~$22) fits most models.
